Home2 Rotisserie Chicken Fried Rice

Quick & easy fried rice using white meat pulled from a Rotisserie chicken and lightly cooked with instant brown rice and eggs in a skillet.


  • Nonstick skillet, microwave


  • Rotisserie chicken
  • Small carton eggs
  • Instant brown rice packet
  • Bag frozen peas and carrots
  • Lite soy sauce packets
  • Spray olive oil


  1. Heat up Instant Brown Rice in the microwave
  2. Remove the skin from the rotisserie chicken and pull the white meat, chop it up into pieces
  3. Place non-stick skillet on medium-high heat, spray with a little olive oil
  4. Toss in chicken and rice, and cook for about 2 minutes
  5. Make a big hole in the skillet
  6. Beat eggs and pour in the middle
  7. Chop up the egg, mix everything together
  8. Fold in frozen peas and carrots
  9. Season to taste with low sodium soy sauce
  10. Garnish with green onion if desired

Nidi di pasta con Ratatouille


  • Olive oil, to taste
  • 250 g pasta noodles
  • 2 eggplants, chopped
  • 4 zucchini, chopped
  • 20 cherry tomatoes, chopped
  • 2 red onions, chopped
  • 2 bell peppers, chopped
  • ½ stalk celery, chopped
  • 50 g pine nuts, chopped
  • Breadcrumbs, to taste
  • 2 cloves garlic, minced
  • Basil leaves, to taste
  • Water


  1. Add olive oil to a skillet over medium-high heat. Add red onions, bell peppers, celery, 1 clove garlic, and cherry tomatoes. Cover and cook until tender and onions are opaque. Set aside.
  2. Add more olive oil to skillet. Add eggplant and zucchini. Cook until tender and golden. Set aside and mix vegetables.
  3. Add pine nuts, breadcrumbs and 1 clove garlic to skillet. Roast and set skillet aside.
  4. In a saucepan, bring water to a boil. Add pasta and cook until tender, about 8 – 12 minutes.
  5. Add drained pasta to breadcrumbs in skillet and mix.
  6. Place vegetable mixture on a plate and nestle pasta on top. Garnish with basil leaves.
  7. Serve and enjoy!

Quiche in a Mug


  • 2 eggs, beaten
  • 2 tbsp. ham, diced
  • 1 tbsp. milk
  • 1 tbsp. your fav cheese, cubed
  • 2 tbsp. bell pepper, chopped
  • ¼ cup spinach, chopped


  1. Combine all ingredients (except bell pepper) in a mug and stir.
  2. Place mug in microwave and cook for 2 minutes, covered. Garnish with bell pepper. Serve and enjoy!

Margherita Quesadilla

Margherita Quesadilla


  • 1 wheat tortilla
  • 3 oz. mozzarella, chopped
  • 1 tomato, chopped
  • 3 basil leaves, chopped


  1. Spray skillet. Place tortilla in skillet and heat over medium-high heat.
  2. Add mozzarella, tomato, and basil leaves on one half of the tortilla. Cook for 1 minute.
  3. Fold empty half of tortilla over and cook until cheese melts.
  4. Flip quesadilla over and cook until both sides are brown. Serve and enjoy!
